One of the things I haven't generally been good at is using leftovers. I mean, we eat them, often for lunch but usually it is in the same format so I am in envy of people who can look at their leftovers and think up something different.
An exception to this is when we make up a big batch of butter chicken, which is a mild curry. Rather than just reheating it and cooking more rice, we tend to make butter chicken pizza. We use the sauce from the curry as the sauce on the pizza base is very tasty.
I think the first time I saw this recipe it was in a small pamphlet that featured everyday recipes from Masterchef contestants and I thought it sounded a bit odd, but curry pizzas are now definitely I think the original recipe included things like curry leaves, but the reality is that we have dumbed our version of it down a bit. I therefore don't have an exact recipe. It's more like a guide!
We have also been known to buy prepared butter chicken from the supermarket for those nights when we just want something super quick and tasty.
We start with a pre-prepared pizza base and cover it with the curry sauce and chicken. We then add red onion, baby spinach and then cover it liberally with cheese and then cook for 15 to 20 minutes.

What a brilliant idea!!! We love pizza and I have used leftover roast chicken, etc. for pizza but never thought of a curry version. Makes me want to whip up butter chicken just for the leftovers.

It's one of the convenience foods to pick up and heat up quickly for a mid week dinner.

ReplyDeleteWe don't have a place nearby at all for Indian takeout but I love a good curry. I like living rurally but sometimes I miss the conveniences of good Indain or Chinese.
We do try to make our own curry most times, but every now and again we do pre-prepared.
DeleteWe also tend to use leftovers as lunches, in their original format. Sometimes I will take several leftovers and make a hash. Or a form of potato cake. If in doubt they go into the soup container in the freezer.

DeleteWe eat a lot of leftovers, both as originally prepared and in a modified dish. I like to use leftover steak for quesadillas or mixed in with scrambled eggs. We use grilled chicken breasts for sandwiches, chicken salad, quesadillas, or tossed in salads. I had leftover halibut in a flour tortilla with mashed avocado for lunch today. My husband likes to put leftover pork or steak in a ramen bowl and makes meatloaf sandwiches the day after we have meatloaf for dinner. I have never made curry and have no idea what butter chicken is, so I'm off to search for recipes. Thanks!
